An all-time-favorite for all due to the mouth-watering chocolate coating and especially the nibble-size cupcake look. The biscuit is made up of 3 main parts – a whole toasted almond, covered in a crispy biscuit, and coated with chocolate.
Ingredients:
250 gm butter
125 gm castor sugar
1 egg
1 teaspoon vanilla essence
50 gm almond powder (optional)
300 gm plain flour
200 gm corn flour
2 tablespoon rice flour
1 teaspoon baking powder
Toasted whole almond (baked for 10 minutes)

- Cream butter and sugar until light and fluffy. Beat in the egg.
- Add in vanilla essence and almond powder
- Add flour and mix it well until soft and pliable.
- Take 1 whole almond and wrap some dough covering it
- Bake at 200°C for 20 minutes
Chocolate Topping:
600 g of cooking chocolate
1 tablespoon of vegetable shortening
Almond nibs (baked for 5 minutes)
- Double-boil the cooking chocolate and once it completely melted turn off the flame
- Add vegetable shortening for shine (kept the bowl over the water bath until finish decorating the cookie as the chocolate will harden if left too long outside)
- Arrange cookie on a small paper cup
- Spoon over some melted chocolate over the cookie
- Add some almond nibs and let the chocolate harden
